With all the great design blogs, craft blogs, and tech blogs to keep up with, who has time to spend drooling over all the food blogs out there? That's where I come in. Each week I'll be choosing a theme and subjecting myself to hunger pangs as I scour the web in search of tasty recipes that anyone can make. It's snowing relentlessly here in the New York, but I remain hopeful that spring is just around the corner thanks to these bright and colorful dishes. This week's menu is an ode to warmer days ahead.

Course 1: Rhubarb Mojito

Rhubarb Mojito

While Rhubarb season hasn't quite arrived, I've started seeing them peak up in stores here, and it makes me hopeful for the early arrival of spring. This Rhubarb Mojito by Megan of Brooklyn Farmhouse is a delicious concoction of rum, rhubarb and mint that's a harbinger for the sunny days ahead.

Course 2: Curried Carrot And Split Pea Soup

Curried Carrot And Split Pea Soup

The colors in this Curried Carrot And Split Pea Soup by Greedy Gourmet beam with sunshine, but it's made with veggies and legumes that are available year 'round. It's a nice way to fool yourself that the days are getting longer and the sun a little brighter. The potatoes and split peas give it enough oomph to fill you up, while a touch of chili will help keep you warm if you're digging yourself out of the snow in the North East.

Course 3: Quenelles of Fish in Nantua Sauce

Quenelles of Fish in Nantua Sauce

Trissa from Trissalicious brings us this vibrant Lyonnais seafood dish. The quenelles, made from pike, are like a French fishcake, which are then covered with a golden orange sauce seasoned with garlic, onions, tomato, fennel, then fortified with cream.

Course 4: White Chocolate Mousse Cake

White Chocolate Mousse Cake

Don't let the wintery white exterior deceive you. This White Chocolate Mousse Cake has a vibrant layer of red current jam just under the surface. Judy, of Domestic Goddess Adventures takes us through the process of making this scrumptious cake with photos each step of the way.
