pistachio ice cream

After my post about non-dairy ice cream last week, Bonny emailed in to tell me about what she's been doing at home to cure her ice cream cravings.

As a person who can't digest dairy but is addicted to dairy (why are we always addicted to things we are allergic to?), I've been trying to make dairy free ice cream for a long time. Here's a recipe that worked for me: nuts: I've tried roasted, unsalted pistachio and raw cashew water salt sweetener: I've tried honey First put nuts in food processor and process to a fine meal, the finer the better. Then add water, a touch of salt and sweetener. Basically you want a consistency that feels like a pancake batter gone a bit thin. If you taste it, the flavor is right and it is not too rich, then it's time to put in your ice cream maker. That's right, this is it, no more steps. The first batch you'll learn a lot about what would make the best consistency. It is so yummy and you'd never know it's made without dairy because the nuts are so rich!

It's hard to believe it's that simple, but I love that this recipe is more a method of trial and error than anything else. Nice to be inspired to experiment a bit in the kitchen, I think. Thanks for sharing Bonny (and I promise to try this once I buy myself an ice cream maker)!
