I don't know what it is about a sunny side up egg, but throwing one onto a ho-hum dish will immediately elevate it into sexy territory. Go one step further and toss on some caramelized onions and you've got a definite party on a plate. It's inherently simple yet it's more than just some pasta, veg and egg. The textures and flavors are inspiring and unpretentious. It's gorgeous on a plate and it's sublime for the taste buds.
This meal may be a mouthful to say, but it's a cinch to prepare. While I'm not necessarily a fan of angel hair pasta, it does provide the delicate surface needed for the rich and silky egg yolk to mingle and cling about in. Plus it's quick cooking, perfect for a weeknight meal. Go ahead and switch up asparagus or kale for the broccoli, most any dark green veg will work nicely here. And please don't skip the caramelized onions, those crispy dark bits are my favorite part.
Angel Hair Spaghetti with Broccoli, Caramelized Onions & a Fried Egg
1 large onion, sliced thinly
2 tablespoons olive oil.
250 g Angel Hair spaghetti
1 head broccoli, divided into florets
2 eggs, organic & free-run
1 tablespoon butter salt & pepper, to taste
1. In a large heavy skillet, heat olive oil and add in onions. Cook slowly over medium heat, tossing often, until they transform into soft and crispy brown bits. Remove from heat and set aside.
2. Meanwhile, cook pasta according to package directions. When the pasta about 5 minutes away from being done, add the broccoli florets to the pasta and cook until the pasta is done and the broccoli is bright green. Strain and divide onto 2 plates.
3. In the same skillet that you used for the onions, reheat over med-high heat and add in some butter. When the butter starts to bubble, crack in the 2 eggs and cook so that the whites cook and the edges get crispy. Gently add an egg to each plate and sprinkle the caramelized onions over top. Add salt and pepper. Serves 2.
