When I'm not in the mood to cook, I've got a couple of choices: order in or figure out something quick. This usually happens in the summer when the weather is hot and the idea of turning on the oven seems unbearable. Often I will resort to an uncomposed platter filled with fresh bread, crackers, charcuterie, wedges of cheese and fresh vegetables. It's like bringing a picnic into your living room or patio and eating like how I imagine Europeans might. While it's an ideal way to eat when you have friends around, I think it's best when it's just the two of you. Want to tip that nibble platter over the top? Whip up a simple no-cook dip. To get you inspired, here's a host of easy dips that are perfect for your next no-cook night.
The super cute blog, The Gluttonous Vegan, has a simple recipe for minted butterbean spread. Just 4 ingredients and a whizz around the blender and you are left with a perfect dip for pita.
This goat cheese & thyme dip at Green Kitchen Stories is another no-fuss dip that packs a wallop of flavor. But if you're feeling ambitous, bake up some of her gluten-free nut crackers as the perfect dipping vehicle.
Want to have a great night on the patio? Make this garlicky romesco dip from Dinner with Julie for your very best friends. It reeks of pungent garlic and is ripe with bold flavor.
Think that edamame works only as a salty bar snack? Think again. 28 Cooks combines ready-to-eat edamame with a whole lot of tasty to make this delicious looking dip.
