Pita pizzas are the realm of the latchkey and the lazy and I'm OK with that. They taste delicious and they use up all those bits and bobs haunting your refrigerator. Do you have guilt over all that zucchini in your crisper? Spread a thin layer of tomato sauce, slice up the zucchini, and top with your favorite cheese. Toast it in the oven for ten minutes and you've got yourself a tasty dinner. 
 
Most of my pita pizzas don't even use tomato sauce. One of my recent favorites included cheddar cheese, leftover sauteed greens, and the crowning glory of a fried egg on top. I zapped the whole wheat pita and grated cheddar under the broiler (watch out, it can burn quickly!) and then added the rest of the components on top after it was removed from the oven. It was fantastic. I'm a fan of pretty much anything with a delicious yolky egg on top.

I'm obviously not the first person who appreciates the ease and deliciousness of the pita pizza. Rita over at Got A Little Space to Fill uses tomato sauce, partly skimmed mozzarella along with raw onions and diced fresh tomato to top her pita pizzas. 
 
Gimme Some Oven's ingredients
 
Gimme Some Oven goes the traditional route and makes a quick and easy Hawaiian pita pizza. She also uses a toaster oven to make hers, which is probably so much easier on the old hydro bill than turning on the oven. 
 
Perfect Pantry's pita pizza
 
I'm not the only one who appreciates a runny egg yolk on their pizza. Over at the Perfect Pantry, Lydia creates a delicious creation using asparagus, sausage, and egg. She says that she prefers the pita as a crust since using regular pizza dough can be too heavy. The pita version is lighter and crisper and makes an ideal quick weeknight supper. 
 
cowgirl chef's bean & salmon pizza
 
I love the idea of using beans as a base. Cowgirl Chef uses smashed refried black beans, salsa, leftover cooked salmon, and some goat cheese to create her Mexican pita pizza. 
 
The possibilities for toppings are endless. Use hummus, salsa, or any other thick sauce or spread and top with leftovers or fresh vegetables. What's your pita pizza standby?
