Reader Recipe (Bonus!): Four-Ingredient Mini Fruit Tarts

As I mentioned in the other Reader Recipe post today, here's the bonus recipe from Valerie Gordon of Valerie Confections. You know what I love about this one? It uses ingredients that don't require any fussing at all and yet they still look totally high class. You can buy the tart shells at the store when you're picking up a high quality jam, along with the cheese and the berrries. And almost instantly, you have dessert ready. These little bites could work with all sorts of flavors and I am betting that they would be divine with a whole host of other berries. Can someone make me some with lemon curd please? Thank you very much!
Mini Fruit Tarts
"An easy dessert to make at home, these Fruit Tarts have the added benefit of looking like you spent all afternoon making them. Premade tart shells are the key, with quality options available at gourmet stores and, increasingly, at many supermarkets. Mix Mascarpone with your favorite preserves, pipe into the shell, and garnish with seasonal berries for quick, pretty dessert." —Valerie
30 pre-made tart shells
1 cup mascarpone
1 cup berry jam
30 blueberries
1. Mix mascarpone and jam in a standing mixer or with a hand mixer.
2. When the cheese and jam mix is fully incorporated, spoon 1 heaping teaspoon into each tart shell.
3. Top with blueberry.
4. Mini tarts should be refrigerated until ready to serve/eat.
