Vegan Pancakes for One

There's an Of Montreal song called "Pancakes for One" with lyrics that go:
Pancakes for one are always depressing
Because having breakfast with you was such fun
Pancakes for one are no fun
Well, I'm here to disagree 'cause pancakes for one can be pretty damn satisfying. Sure it's easy to eat a bowl of cereal but sometimes you want something a bit more special than a box of Special K can provide. And pancakes fit the bill perfectly. What can be more comforting than a fluffy pancake topped with maple syrup? Not much, so why deprive yourself of a perfectly good pancake?
Making pancakes seems like a big production, but the truth is, it's really easy to make pancakes for one. In fact, it's so much simpler than standing in front of the stove flipping pancake after pancake until the batter is used up. Sure you can freeze any leftover pancakes but why go through all the trouble?

This recipe couldn't be simpler and makes use of common pantry staples. I usually add eggs to my pancakes but when my fridge was looking bare, I didn't let that stop me. A spoonful of flax was added for a hit of protein and I mixed my almond milk with a touch of vinegar to create a vegan buttermilk. Fluffy pancakes for one? Not a bad way to start the day.
Vegan pancakes for one
1/4 cup all-purpose flour
1/4 cup whole wheat flour
1 teaspoon baking powder
1 tablespoon brown sugar
1 tablespoon ground flax seeds
pinch of salt
1 teaspoon vegetable oil
1/2 scant cup almond milk (or any non-dairy milk of your choice)
1 teaspoon cider vinegar
Mix together the dry ingredients and in a separate bowl, combine the wet. Add the wet to the dry and lightly mix. Let sit for 5-10 minutes so that the pancakes have a chance to rise.
Heat up a large non-stick skillet and lightly mist it with oil. Add batter to pan, enough to make one large pancake or make a couple smaller ones. Flip when the top looks bubbly and dry, about 3 minutes. Flip and cook until done. Eat with maple syrup and fresh fruit.
