Over the weekend, it was time to thin out our lettuce and beet plants. My boyfriend Josh is really the one in charge of our two raised beds, so he went about his business, only to have it occur to me that we could eat his cast offs about an hour later. I went out and lucky he had just pulled them and set them aside in neat little piles. I gathered them up, carefully washed them off and proceeded to get extremely excited about yard-picked microgreens.

Josh hadn't heard of microgreens and didn't know how much fancy chefs and stores charge for them (a lot), but he was happy to do his part (with a fork) to make the most of our garden—even in it's wee stage. We ate the greens mixed into a big salad that night for dinner, along with some purple basil also from the yard, and I think they added a nice burst of fresh flavor. While I'm definitely looking forward to eating the mature plants, I'm really happy that I caught the discard pile in just enough time to transform it into dinner!
