Over the holidays I had a serious craving for meatloaf, which was surprising since it’s got to be close to 5 (maybe even 10) years since I’ve had it. Apparently that craving passed because I didn’t remember that I nearly insisted on finding a diner immediately until I saw this image on Food Loves Writing this morning. It’s a meatloaf sandwich, which is just about as perfect a use of leftovers as I can imagine. Would it be weird if I set a goal to eat meatloaf, either on it’s own (with mashed potatoes) or as a sandwich, this week? I hope not!

I had this same craving last year while at school! I couldn’t even find a single place in the city that served meatloaf… which for some reason, I thought was pretty absurd at the time. I ended up having no choice but to let the craving pass. So… in my opinion, not a weird goal at all!
Shanna’s blog is one of my favorites! Her meatloaf looks perfect.
I am 100% with you on the meatloaf sandwich. It’s a food I never make for myself but every time I have one (usually at Mom’s or Grandma’s, of course), it’s a transcendent experience.
Everyone knocks meatloaf, but it’s actually a very healthy, economical way to eat meat– you stretch it out with lots of chopped veggies and oatmeal or breadcrumbs; you drain the fat; you turn a pound of meat into a family meal with leftovers; you swoon from the taste– what’s not to love? I salute your goal!
