Milk Moooooves
Swap out the whole milk called for in these recipes for your favorite alternative—lower-fat cow’s milk, rice, almond, or soy. With the three latter options, go with an unsweetened plain variety so the milk’s flavor doesn’t argue with other ingredients in each recipe.
Custard’s Last Stand
Do your best not to rush through the steps that allow the bread to stand in the custard. Letting your bread soak up the eggy milk will ensure a most tasty result.
(Don’t) Butter Me Up
Any of the stove-top preparations can also be baked. Spray a baking sheet with nonstick canola oil (like the kind from Spec-trum Organics), then bake in a 350°F oven for about 15 minutes, checking after 10 and cooking longer as needed. You know what “done” French toast should look like.
