Makes approximately 1½ cups.

    Materials

  • 1 small to medium cucumber
  • Kosher salt
  • 1 large garlic clove
  • 6 oz Greek yogurt (full-fat or 2 percent)
  • 2 T (1 oz) olive oil
  • 1 T minced fresh mint
  • ¼ t celery seed

    Tools

  • Peeler 
  • Mixing bowl

Peel and de-seed the cucumber, then finely dice to end up with 1 cup of chopped cucumber. Toss in a bowl with a pinch of kosher salt, place in a strainer over a bowl, and press gently to quickly remove the excess liquid. (Save the liquid for a Pimm’s Cup or other refreshing summer drink!)

Mince the garlic clove and sprinkle with kosher salt. Press and smear the garlic with the side of your knife, then continue to mince. Repeat one or two times more until a thick paste forms.

Combine the drained cucumber and garlic paste with the yogurt, olive oil, mint, and celery seed, and stir well. Chill for 1 hour before serving.
